Delicious Pollock – Tender, Juicy & Full of Flavor

If you’re looking for a fish recipe that’s quick, flavorful, and made with heart, this one is a real winner. It’s perfect for a cozy family dinner or a spontaneous guest visit. And the sauce? You’ll want to soak up every last drop with a piece of fresh bread!

Ingredients (Serves 2–3)

  • 300–500 g pollock (fillet or whole)
  • Salt, pepper, sweet paprika, and fish seasoning – to taste
  • 2–3 cloves of garlic
  • 1 bunch of green onions
  • 50 g plain yogurt or sour cream
  • 100 g heavy cream (20%)
  • 100 g water
  • Olive oil – for frying
  • 1 tablespoon of butter
  • 1–2 teaspoons of Dijon or whole grain mustard

Instructions

Крок 1.
Ретельно промийте минтай і промокніть його паперовим рушником. Натріть його сіллю, перцем, паприкою та вашою улюбленою рибною приправою. Збризніть невеликою кількістю оливкової олії та обережно втирайте спеції в рибу.

Step 2.
Heat a pan over medium heat. Fry the fish on both sides until it forms a beautiful golden crust. Remove it from the pan and set it aside.

Step 3.
In the same pan, melt the butter. Add finely chopped garlic and sliced green onions. Sauté for about 2 minutes, just until fragrant and soft.

Step 4.
Pour in the cream and water, then add the yogurt (or sour cream) and mustard. Mix everything thoroughly. Let the sauce simmer on low heat for 2–3 minutes.

Step 5.
Return the fish to the pan. Spoon some of the sauce over the top, cover with a lid, and let it gently simmer for another few minutes. This allows the fish to soak in all the rich flavors of the sauce.

Serving

Serve the dish hot, ideally with mashed potatoes, bulgur, or simply a slice of fresh, crusty bread.
