Cottage Cheese Casserole with Raisins

Ingredients:

  • 600 g soft cottage cheese
  • 3 eggs
  • 50 g cornstarch
  • 50 g sugar or sweetener
  • 60 g raisins
  • A pinch of vanillin
Instructions
  1. Prep the Raisins:
    Pour hot water over the raisins and let them soak for 5 minutes. Drain and set aside.
  2. Blend the Base:
    In a blender, mix cottage cheese, eggs, cornstarch, sugar (or sweetener), and vanillin until smooth.
  3. Add Raisins:
    Stir in the soaked raisins with a spoon (do not blend).
  4. Bake:
    Pour the mixture into a greased or lined baking dish.
    Bake in a preheated oven at 180°C (356°F) for about 50 minutes, until golden and set.
  5. Cool and Serve:
    Let it cool slightly before slicing. Serve warm or chilled.
